In the years of my maturity I gave shape to the idea of making wine on the green hills of Casentino crowned by the peaks of the Apennines.

The remarkable day / night temperature range of these our hills gives finesse and vivacity to the aromas and the clayey-limestone soils with their moods transfer persuasiveness and substance to the grain.

In the total 4 hectares of vineyards are planted, dense like peppercorns, 44,000 vines of pinot noir and abrostine, an ancient Etruscan grape.

All the grapes are vinified parcel by parcel and each by itself

The intimate reasons for this wine lie in my youth, in being an agronomist, in the land, in the people of Casentino, and finally in its coolness, of which pinot noir, an absolute grape, greatly rewards in vibratory finesse and elegance.

  In all the productive choices made since the planting of the 3 hectares in the years 2004-2007, the funds of science and the "tecne" have accompanied the hand in cultivation and the feet in the labor of wine, with attention and respect.

  The biological work of the 7 small vineyards Nuc, Pozzo, Fedelone, 2 Fratelli, Querce, Becco and Cuna Etruscan toponym and cadastral, joins the sunlight and makes wine through 7/8 harvests from the "very early" of the first days of September to the "late", when it is already October.

  In doing so, I try to bring out, from the different vineyards, the many faces of Mr. Pinot: from the sparkle of a barely blossomed youth to the balanced and solid adult to the deep and generous maturity. The last grapes, exhausted and late, already cold in the autumn, are still alive in the fermentation with all the stems, or many.

  Sometimes before, sometimes after, more often in the course of refinement in the old piéce de Bourgogne, the bottom of the different wines to unity, where the pinot noir testifies more of the places than of itself.

BRENDINO cru

pinot noir

4000 vines arranged at 50 cm from each other that line the peaks of the Pratomagno.

This natural terrace open to the world in the middle of the meadows is Brendino vineyard.

At most I produce from this cru of pinot noir "petit petit fin" about a thousand bottles per harvest, if I produce them.

It means 1 bottle every 4 vines or 270gr per grape vine.

The climate and the land are the same as in the only clos within which the wines of Podere della CIVETTAJA and CUNA are produced.

 

At Brendino, however, the spirit of the place is different; it is airy and has a sense of vastness.

Then in the technique, there are two characteristics that distinguish BRENDINO from CUNA:

here the very last pinot noir grapes are harvested and in the vinification the proportion of grapes that ferment in whole bunches, therefore with the stalk, is conspicuously higher.

 

Always two years in the bottle at least before leaving.

SEMPREMAI SORTE

 Arcane, skin and bones as are the dog rose or blackthorn, abrostine comes precisely from the domestication of a wild grape: the labrusca of Pliny the Elder (N.H. XIV, par. 93) and the 'Vitis vinifera ssp. sylvestris' of botany.  Here it is planted on a sunny slope and yet germinates late and ripens very late, as it is serotine by nature.

  The cold harvest of these sparse and scattered grapes comes after October 20th, with the beech trees in the Apennines already in their autumn mantle and sometimes with snow.

  The grapes abrostine, very rich in color and natural tannins good for the heart and circulation but potentially rough, is entirely crushed by hand in open tonneaux and immediately pounded with the feet to promote the extraction of anthocyanins in the first 3 days of maceration.

Racked early and aged in wood for a long time, SEMPREMAI is bottled by hand like all our wines and SORTE after at least 2 years in bottle.
